Ingredients
  

Pasta and Base

  • 2 cups cooked pasta, such as rotini or penne Can use whole wheat or gluten-free alternatives.
  • 1 cup cooked chicken, diced Leftover roasted chicken or rotisserie chicken can be used.
  • 1 cup romaine lettuce, chopped Can mix in baby spinach or arugula for a twist.
  • 0.5 cups cherry tomatoes, halved Can substitute with sun-dried tomatoes.

Finishing Ingredients

  • 0.25 cups Parmesan cheese, grated Freshly grated is preferred.
  • 0.5 cups Caesar dressing Use store-bought or homemade.
  • Salt and pepper To taste.

Preparation

  • Bring a pot of salted water to a boil. Cook the pasta until al dente, about a few minutes less than package instructions. Drain and rinse under cold water to stop the cooking.
  • In a large mixing bowl, combine the cooled pasta, diced chicken, chopped romaine, and halved cherry tomatoes.
  • Drizzle with Caesar dressing and toss gently to combine.
  • Top with grated Parmesan cheese, and season with salt and pepper. Toss lightly again.
  • Serve immediately or refrigerate briefly to allow flavors to meld.

Notes

For extra crunch, consider adding toasted pine nuts or croutons just before serving. To keep lettuce crisp, add it fresh before serving if storing the salad.
