  • 1 Tablespoon Olive Oil Can substitute with sesame oil.

Cooking Steps

  • Heat olive oil in a large skillet over medium heat until shimmering.
  • Add sliced chicken and cook for about 5-7 minutes until golden and no longer pink.
  • Add minced garlic and cook for another minute.
  • Add zucchini, bell pepper, and onion to the skillet and stir everything together.
  • Stir in soy sauce and season with salt and pepper.
  • Cook everything for an additional 5-7 minutes until the veggies are tender but still crisp.
  • Serve hot, garnished with sesame seeds if desired.

Notes

For best results, do not overcrowd the pan. You may prep the ingredients ahead of time for quicker cooking. Leftovers can be stored in an airtight container in the fridge for up to three days.
