  • 12 oz Pasta (spaghetti, linguine, or penne) Penne recommended for its ability to hold the sauce.
  • 2 tbsp Olive oil (extra virgin) Use high-quality olive oil for flavor.
  • 3 cloves Garlic (minced) Freshly minced garlic is best, but jarred works in a pinch.

Sauce Ingredients

  • 1 cup Milk (whole, 2%, or plant-based) Choose based on personal preference.
  • 1 cup Parmesan cheese (freshly grated) Grate fresh for best flavor.
  • 1 tsp Salt For seasoning.
  • 1/2 tsp Pepper Adjust to taste.
  • 2 tbsp Parsley For garnish.

Cooking

  • Heat olive oil in a large pot over medium heat until it shimmers.
  • Sauté minced garlic until fragrant (about 1 minute) but do not let it brown.
  • Add pasta and sufficient milk to cover it, stirring to separate any sticking pasta.
  • Reduce heat and simmer, cooking pasta according to package instructions while stirring occasionally.
  • When pasta is al dente, stir in freshly grated parmesan cheese until it melts and creates a creamy sauce.
  • Season with salt and pepper to taste.
  • Serve hot and garnish with fresh parsley.

Notes

For extra flavor, drizzle with olive oil and a squeeze of lemon juice before serving. Add grilled chicken or veggies for more substance.
