  • 2 large Cucumbers Choose firm, crisp cucumbers.
  • 4 medium Tomatoes Opt for ripe tomatoes; heirloom or vine-ripened are best.
  • 1/2 medium Red Onion Thinly sliced; soak in cold water to mellow flavor if needed.

Dressing

  • 1/4 cup Olive Oil Use quality extra virgin olive oil.
  • 2 tablespoons Lemon Juice Freshly squeezed is key.
  • to taste Salt Use flaky sea salt.
  • to taste Pepper Freshly cracked black pepper.
  • 1/4 cup Fresh Basil Chopped, for garnish.

Preparation

  • Chop cucumbers and tomatoes into bite-sized pieces.
  • Finely slice the red onion.
  • In a large bowl, combine cucumbers, tomatoes, and red onion.
  • Drizzle olive oil and lemon juice over the salad.
  • Season with salt and pepper to taste.
  • Toss gently to combine.
  • Garnish with chopped fresh basil before serving.

Notes

Serve chilled as a side dish or light lunch. The salad is best fresh but can be stored in an airtight container in the fridge for up to 2 days.
