  • 1 pound chicken breast, diced Boneless, skinless chicken preferred.
  • 2 large onions, thinly sliced The heart of this dish.
  • 2 cups orzo pasta Substitutable with gluten-free pasta.
  • 4 cups chicken broth Homemade or low-sodium store-bought.
  • 1 cup shredded cheese (Swiss or mozzarella) Mix or use what you have on hand.
  • 2 tablespoons olive oil Extra virgin recommended for better flavor.
  • to taste salt Essential for flavoring.
  • to taste pepper Essential for flavoring.
  • 1 teaspoon garlic powder Can substitute with fresh garlic.
  • 1 teaspoon thyme Herb flavor addition.

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat the olive oil over medium heat.
  • Add the sliced onions to the pan and stir occasionally for about 15-20 minutes until caramelized.
  • Once the onions are caramelized, add the diced chicken, garlic powder, thyme, salt, and pepper. Cook until the chicken is no longer pink (about 5-7 minutes).
  • In a large mixing bowl, combine the chicken and onion mixture with the orzo and chicken broth. Mix well.
  • Pour the mix into a greased baking dish, spreading it evenly.
  • Sprinkle the shredded cheese on top.
  • Bake for 25-30 minutes until the cheese is melted and bubbly.
  • Let cool for a few minutes before serving.

Notes

Serve alongside a crisp salad or with crusty bread. Leftovers can be stored for up to four days in the fridge or frozen for up to three months.
