  • 1.5 pounds beef stew meat Look for chuck or round steak for best results.
  • 2 cups baby potatoes, halved Red or gold potatoes can be used as alternatives.

Garlic Butter Mixture

  • 1/2 cup unsalted butter Can use herb-infused butter for extra flavor.
  • 4 cloves garlic, minced Adjust amount to taste.
  • 1 teaspoon salt Adjust to your palate.
  • 1/2 teaspoon black pepper Feel free to add smoked paprika for more flavor.
  • 1 teaspoon dried thyme Fresh herbs can be used.
  • 1 teaspoon dried rosemary Fresh rosemary is also great.

Other Ingredients

  • 1/4 cup beef broth Swap for vegetable broth for a lighter version.

Preparation

  • Combine beef stew meat and halved baby potatoes in a slow cooker.
  • In a small saucepan over medium heat, melt the unsalted butter.
  • Stir in minced garlic, salt, black pepper, thyme, and rosemary. Let simmer for 2-3 minutes until fragrant.
  • Pour the garlic butter mixture over the beef and potatoes.
  • Add beef broth and gently mix everything together.

Cooking

  • Cover the slow cooker and cook on low for 6-8 hours or high for 3-4 hours until the beef is fork-tender.

Serving

  • Serve warm and enjoy, optionally with a crisp salad or buttery bread.

Notes

For storing leftovers, keep in an airtight container in the refrigerator for up to 3 days, or freeze for up to three months. Reheat gently on the stove or microwave.
