Ingredients
  

Main Ingredients

  • 1.5 lbs Chicken Thighs Boneless and skinless can be used.
  • 2 tbsp Olive Oil Can substitute with vegetable or canola oil.
  • 1.5 cups Long-Grain White Rice Brown rice can be used but will take longer to cook.
  • 3 cups Chicken Broth or Water Broth enhances flavor.
  • 1 cup Barbecue Sauce Choose your favorite brand.
  • 0.5 cup Honey Maple syrup can be used as a substitute.
  • 1 medium Onion Chopped fresh onion recommended.
  • 3 cloves Garlic Minced; fresh is best.

Cooking Process

  • Heat the olive oil in a large skillet over medium heat.
  • Sear the chicken thighs until golden brown on both sides; then set aside.
  • Sauté the onion until soft, then add the garlic and cook for another minute.
  • Stir in the rice and let it toast for a minute.
  • Nestle the chicken back in and add the broth, barbecue sauce, and honey.
  • Bring to a boil, lower the heat, cover, and simmer for 20-25 minutes.
  • Fluff the rice and serve.

Notes

Serve with roasted veggies or a fresh salad. Leftovers can be stored in an airtight container for 3-4 days in the fridge or frozen for up to 4 months.
