  • 8 oz Cream Cheese Full-fat for extra richness recommended.
  • 1 cup Sour Cream Greek yogurt can be a lighter substitute.
  • 1 tbsp Lime Juice Freshly squeezed preferred.

Corn Ingredients

  • 2 cups Sweet Corn Fresh, frozen, or canned can be used. Grill or roast for best flavor.

Flavor Enhancers

  • 1 cup Cotija Cheese Queso Fresco is a great alternative.
  • 1/4 cup Fresh Cilantro Can substitute with green onions or parsley.
  • 1 tsp Chili Powder Can toast briefly for enhanced flavor.
  • 1 tsp Cumin Also can be toasted briefly.

Preparation

  • Preheat your grill or oven for preparing the corn.
  • Grill or roast the corn for 10-15 minutes until charred.
  • In a medium-sized bowl, combine cream cheese, sour cream, and lime juice. Mix until smooth.
  • Fold in the charred corn, chopped cilantro, and crumbled Cotija cheese gently.
  • Add chili powder and cumin, stirring to meld flavors.
  • Taste and adjust seasoning if necessary.
  • Chill in the refrigerator for at least 30 minutes before serving.

Serving

  • Serve with crispy tortilla chips or fresh veggie sticks.

Notes

This dip can last about 3-4 days in an airtight container in the fridge. Freezing is possible but may alter texture.
