  • 1 cup fresh pineapple, cut into bite-sized chunks Fresh is best for caramelization.

For the Glaze

  • 1/2 cup brown sugar Light or dark brown sugar can be used.
  • 1/4 cup soy sauce Tamari or low-sodium soy sauce are alternatives.
  • 1 tbsp Dijon mustard Adds tanginess.
  • 1 tsp garlic powder Can substitute with fresh minced garlic.
  • 1 tsp ground ginger Adds aromatic warmth.

Preparation

  • Soak wooden skewers in water for 20-30 minutes.
  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment or foil.
  • Whisk together brown sugar, soy sauce, Dijon mustard, garlic powder, and ground ginger in a bowl until smooth.

Cooking

  • Thread cocktail sausages and pineapple onto skewers, alternating as you go.
  • Arrange skewers on the baking sheet and brush them with the glaze. Save some glaze for later.
  • Bake for 20-25 minutes, turning halfway and brushing with more glaze.
  • Broil for 1-2 minutes until charred, watching closely to avoid burning.
  • Serve warm on a platter.

Notes

A squeeze of fresh lime juice before serving enhances flavors. Pair with a salad or roasted veggies.
